CPG Sec 550.605 Olives Stuffed with Minced Pimentos - Labeling November 2005
Foreign and domestic producers of stuffed olives, in increasing numbers, have been using stuffing made from minced pimentos that are bonded and pressed into sheets and cut into uniform strips. As a result labeling designating the pimento product as "pimento" does not accurately describe the stuffing.
Regulations for foods analogous to the pimento product have been promulgated for "onion rings made from diced onions" *(21 CFR 102.39),* "fish sticks or portions made from minced fish" *(21 CFR 102.45),* and fried clams made from minced clams. FDA has stated that the term "minced" is consistent with the terms used to describe these foods and that the term is descriptive of the pimento ingredient.
POLICY:
The term "minced pimento" may be used to describe a pimento product made from minced pimentos that are bonded and pressed into sheets and cut in the form of pimento strips ordinarily used for stuffing olives. Olives stuffed with such a product should bear the name "olives stuffed with minced pimentos" or equally descriptive designation.
