A recent study looking at 4200 healthy Americans found that 1 in 133 has Celiac Disease. That means about 1% of our country are afflicted with a debiliting disease, that can be treated. Certainly the Government has an obligation to ensure that simple measures are in place to protect the 3 million Americans with Celiac Disease. Requirng accurate food labeling for gluten certainly qualifies. Failure to require this simple act would condem these victums to spend hours searching web sites and other sources, just to ensure that their food is safe for them. When one considers how much effort and money is spent to ensure that our beef, pork, and poultry food supply is safe, one can not but understand how much more cost effective this measure would be.
