Gluten-free should mean void of wheat, oats,barley and rye in order to conform to gluten free standards in the United States. Currently, labels are a primary source, but not all labels have identifying characteristics; i.e., natural flavors. About 50 % of shopping time is spent in the identification of foods. Only about 5 % of foods are labels gluten free. The designation of gluten free definitely influences my decision to purchase a product.
