I would like to suggest that unless food has been produced in a strictly gluten free environment, with gluten free ingredients, that it should not be labeled as Gluten Free. I would like, however, for manufacturers to be able to state the percentage of gluten in a food item. Example: "This food has less than 10 ppm (parts per million) of gluten". Another example: "This food has less than 0.01% gluten content". We don't want to force providers of gluten free food out of business because they cannot produce a perfectly gluten free item; however we also need information on the label so that celiacs can make an informed choice.
