For the health and well being of celiac sufferers, I ask that you verify the validity of gluten free products. Many food manufacturers are unaware of how many ingredients contain gluten. Many are under the impression that the product must just be wheat free, when in fact, gluten is found in many other items such as vinegar and spices, ketchup and mayonnaise, and so forth. I personally have had severe allergic reactions to products labelled gluten free because they assume it does not have gluten because it does not have wheat as a single ingredient. Education is the key to resolving this problem. We must educate our manufacturers, suppliers, restaurants (management, servers and cooks) about the severity of reactions, diseases caused by this single disease, and the growing prevalence of celiac sprue. In addition, they need to understand about the hidden sources of gluten. Thank you for your consideration of this request.
