As a health care provider and a celiac with children who are celiacs, I encourage you to NOT adopt a zero tolerance for labeling a product gluten free. The European standards have worked well in Europe, and I can testify first hand that the imported products that my family uses do not cauase problems for us. With teenagers, it is imperative to have a large variety of products available to us. In fact, limiting the choices and variety of products could have a negative effect on their health. Without options they may edge toward 'cheating' with foods containing gluten.
