Please consider this a strong support of *required* and consistent labelling of commercial foods produced or potentially contaminated with gluten in any form. As a person who has recently discovered a gluten intolerance, I find it almost impossible to know with any certainty which commercial foods I can safely eat. Since as many as ~1:135 people may be celiac, this has significant consequences for the manufactured food industry (I and many others simply cannot buy anything about which I have any doubt) and the costs of health care (unarrested celiac disease is associated with bowel cancer and may be associated with neurological disorders, leading to preventable social and medical costs).
