As a celiac and member of the Celiac Disease Foundation, I urge you to do whatever you can to more clearly define "gluten-free" on food labels. Once people become diagnosed, it is a difficult and complex diet to understand and follow. This disease is severely under diagnosed as it is. Any support the FDA can provide in helping individuals and families cope with this life-long illness will be greatly appreciated. It is a very difficult to comprehend all of the nuisances of the disease and our food options. To help with clear labeling will alleviate some of the stress and difficulty for people that have so many changes they must now cope with in their lives. In this day and age, many people (non-celiac included) try to be educated consumers and understand what type of food they are ingesting. Any way the FDA can provide help to the general public, and more importantly, those with medical conditions is a necessary service. Thank you for your time and consideration on this very important matter.
