I am very hopeful that processed foods will be required to state on the ingredient label if it contains gluten. I am leader of a Celiac support group in cetral Iowa and we have over 200 members in my group. It is a tremendous challenge for Celiacs to find "safe" food that will not be of harm to us. This is not just an allergy to gluten. Gluten doesn't just cause hives, or sneezing or itchy eyes. Gluten actually destroys the small bowel and causes many ill effects. That's why this legistlation is so important to the many thousands of us that are afflicted with this diagnosis. I have added 30 new diagnosed people to my group just in the last month. Please help us recognize the foods we can eat!
