I understand that you are deciding on the requirements for 'gluten-free' labeling of foods. I am thrilled that this legislation is finally coming about, but I want to caution you about 'zero-tolerence' of these requirements. This stance may cause all of the gluten-free manufactures to re-label all their current products in fear of litigation. Kraft & McCormick's has already, voluntarily, started to label alergins on their labels, including wheat, rye, barley or dairy. I am an extremely sensitive celiac and their products have not caused me any problems. To require labeling of wheat, rye, barley & oats (along with dairy) in all their products, or if the products are processed in the same facilities as products that contain wheat, rye, barley or oats, would meet the greatest need of our community, in my opinion. Thank you for taking the time to read this and for being in touch with the need of a great number of celiacs that live in the USA.
