Food labeling should be used to protect the consumer, and not for the advancement of sale of questionable products. I need to know that the gluten-free foods I buy are, in fact, gluten-free. My health is dependant directly on the food choices I make. Without complete and truthful labels, I can't safely buy any packaged foods. A jumbling of label definitions will leave me feeling lied to and unsafe. I'll have to limit my food choices to those things I can make on my own. Food that actually is gluten-free will not be purchased if I have no reliable way to tell it from food that only claims to be gluten-free.
