| I have celiac disease and dermatitis herpetiformis, and I am very much in favor of labelling gluten free products. When I shop, the gluten free label does influence my decisions about which products to choose. I will always pick a product that is labelled "gluten free" over a comparable product that is not labelled as gf. I do this not only because I want assurance that the food I am eating is safe, but because I feel that a company that is willing to make the effort to label their gf products deserves my business more than those who are not willing.
Products that are labelled gluten free also reduce the time that I have to spend scrutinizing food labels, and eliminates the worry that gluten may be "hidden" under names like modified food starch or natural flavoring. It will make life easier for many people and their families.
