Gluten Free labeling of foods must evolve into a much more widespread standard as more and more individuals are becoming sensitized to gluten. This issue is veiled by the ignorance of the medical community. I am a Registered Nurse dealing with this issue which went undiagnosed for years causing me fiancial and professional ruin. Gluten Intolerance symptoms are multi-faceted and many diagnoses of auto-immune diseases are direct seqelae of this sensitivity. Even after becoming aware of my disease it has been impossible to keep from accidental poisonings because of the vagaries of the labeling of foods containing wheat, barley, rye, and oats or any portion thereof. Having these foods properly labeled will enable me to more fully control my health issues and become a more productive person.
