Please consider the issue of cross-contamination in food production. Many products 'read' gluten-free but because of the manufacturing environment are not in actuality gluten-free. I spend alot of time phoning and emailing food producers to determine whether product is 'safe' for my 2 celiac kids. Also, please address labeling of pharmaceutical products. It's not easy for a consumer to get information regarding prescription drug ingredients which pharma co's consider 'proprietary'. Trying to ascertain the gluten status of a drug by using an uninformed, busy pharmacist or doctor as a go-between doesn't always work.
