1) What should "gluten-free" mean on a food label?
I would defer to health professionals for this definition.
2) How do you identify food that do not contain gluten?
I read ingredients labels. This is a laboreous procees, therefore I don't often try new products. A gluten-free label would significantly reduce my shopping time and widen my selection.
3) What percentage of foods and which types purchased are marked "gluten-free"?
A very small fraction of products are marked, some "health food store" brand products are labeled. Some salad dressings and marinades are labeled.
4) Does "gluten-free" printed on a product label influence your decision to purchase products having the same ingredients?
Absolutely! Please enact the gluten-free labeling asap.
