Clear and concise labeling is required to protect the health and safety of celiacs. My two children have the disease and it is amazing how much time it takes to sift through the labeling nightmare and the nonsense associated with it. For example, modified food starch needs to be clearly identified as what it is... however, it would be much easier to just require all products to be labeled gluten free if they are - (not voluntary but required). Malt, barley, oats should be included in the labeling as well since so many celiacs also suffer from this type of exposure.
