I encourage you to adopt a zero tolerance policy when considering gluten free food labeling. For those of us who suffer from celiac disease who cannot tolerate any gluten, this is an extremely important issue. By allowing companies to have even a small amount of gluten and wheat starch in their product and still label it "gluten free" it would put those of us suffering from this illness at risk for further complications that even if they didn't show up immediately would present overtime. I just don't think it is worth the risk to my health or the health of 3 million of the population.
