Celiac patients need to have 100% gluten free diets, having access to 100% gluten free products, that are labeled accordingly will greatly improve compliance to their gluten free diet and greatly improve their health. To society as a whole, this will decrease overall costs due to improvement in health, less chronic illness, less $$ spent on health care and improved productivity at work.
