| Mandatory food labeling identifying GLUTEN as an ingredient is essential to the health and well being of the Celiac community. 1-133 people are expected to be Celiacs. Current underdiagnosis is not a reason to continue ignoring the need for clearly labeled food. Those who are aware of their Celiac status can make safe, informed food choices when labeling becomes clear. Celiacs must remain 100% gluten free for life. It's not negotiable.
