I recently discovered that I suffer from celiac disease and I can only eat foods that are gluten-free. I thought finding GF food products would be simple but it's a daunting task. Some companies (very few) do identify their gluten-free products but there needs to be another level of identification that indicates the degree to which those 'gluten-free' products might be 'wheat-contaminated' during the food manufacturing process. Right now, with the lack of sufficient labeling, over 1.5 million other Americans who suffer from celiac disease (myself included) have no way of knowing if we're making good decisions for ourselves. And since those decisions affect our health and well being, I urge the FDA to develop some labeling method that will allow us to see, at a glance, if a product is in fact totally gluten-free and, if not, to what degree that product might be wheat-contaminated.
