As a very sensitive celiac, I am in favor of two standards, a low-gluten standard of 20 ppm, which does seem to be safe for many people with CD, and a truly gluten-free standard - UNDETECTABLE with the best commercially available tests, which I believe would be 3 ppm at this time. I have neurological problems from CD, which causes extreme nerve pain. Low amounts of gluten do not cause me to have digestive problems, but do cause an autoimmune reaction that affects the nervous system. I went through a tremendous amount of nerve pain before I realized that 'gluten- free' products really contained gluten. I now eat a completely fresh foods diet - no processed foods at all. I would like to be able to add some of the alternative grain products, if there were any way to feel confident that there was really no gluten in it. Thank you for having these hearings, and please don't forget the sensitive celiacs. Remember: **The most sensitive celiacs do not participate in challenge studies.**
