Do to the particularly damaging results of gluten ingestion for celiacs, it is imperative that food labels clearly list ANY gluten or cross- contamination issues on all labels. Celiac disease is far more prevalent in the USA than previously thought. Frequently misdiagnosed as IBS (for which there are a multitude of drugs), it is now believed that 1 in 100 people suffert from this genetic auto-immune disease.
