I am a Celiac. Whole unprocessed foods are safest for me to consume. However, when travelling it is not always easy to have access to safe foods, unless I bring them with me. I need to avoid the offending grains to stay healthy. Listing of the foods that are safe would ease my concerns. Too often manufacturers either don't understand my needs or are reluctant to release necessary information on the ingredients contained in their products. I feel it should be their responsibility to know what is in a product they sell and to have it labelled, even though their suppliers may vary their ingredients. I.E.- modified food starch from wheat, sometimes from potato, or corn, or tapioca. With a true accounting of the contained ingredients, I can make a food choice that is safe for me, no matter where I am in the USA.
