I hope there will be more products with the labels stating Gluten Free.....I have been on the diet for 15 3/4 yrs..we have come a long way since I started the diet....more & more people are being dx....I want to see better labeling on products to purchase as it is imperative to a Celiac's health for survival as it effects the immune system and can make us very ill while damaging our bodies after ingesting gluten. I have to spend a lot of time reading labels when I go to the store. I question if they put all the ingredients on the label for my diet needs....I often call companies to find out if there is gluten in their product. Sometimes, you get a customer service rep that does not understand gluten.....All this takes lots and lots of time as 99% of the foods at the grocery store are NOT marked gluten free.....if something states gluten free, I will buy the product because I feel it is safe in what it contains, and that it won't harm me. As far as levels of definitions of gluten free, I would definitely buy level A that is suppose to be 100% gluten free ...I may consider level B a trace amount but right now I wouldn't consider level C...
I hope you will help us Celiacs in our special diet....the amount of Celiacs keeps rising......1 out of 133 have CD but only about 3% have been dx. so there are about 2.1 million under dx Celicas out there yet in the USA who need to be dx. There are those who have the skin problem of Celiac called Dematitis Herpetiformus.....so it is very important we have better labeling.....for instance, modified food starch could be flour, cornstarch, arrowroot, tapioca, etc. This makes it hard for us to purchase the product....we would then have to call the company to find out what they used....some companies state they use the words modified food starch because it is what they can get the cheapest......that doesn't help us at all. So, please take notice there are a lot of people who have this problem and the number keeps growing because doctors are starting to understand this disease and diagnosing more people with CD....thanks for your time and efforts......
