| I was diagnosed over 15 years ago and still have trouble staying on a gluten free diet because of the hidden sources of gluten. I have especially difficult times when eating out, especially when traveling for business.
It is important to label food gluten free (when they are gluten free) and to insist that restaurants and owners, operators, chefs, and kitchen employees become aware of the hidden sources of gluten and advise patrons of the food content.
