A "gluten free" label would be most useful to those with Celiac Disease. The level of gluten tolerance should not be "zero". Many foods that do not contain gluten as an ingredient and that is processed in an environment where good cleaning practices and industry standard anti-allergen considerations result in products that are perfectly safe for Celiac Disease sufferers. To adopt a very strict standard will drive manufactureres away from any declaration of gluten-free and result in fewer products being available and a higher level of uncertainty for consumers who are concerned about gluten.
