| To whom it may concern:
My two year old son was diagnosed this week with celiac disease. Faced with teaching our son to manage a life-long restrictive diet, we ourselves are unable to discern at times which foods are safe. Our child faces an increased risk of lymphoma and other cancers if he continues to eat wheat products--how can we protect him if we don't know what foods are or aren't gluten free? A voluntary labeling system and definition for gluten- free foods would be tremendously helpful for us and the estimated 2 million others with celiac disease. I cannot see how this would present any undue burden on the food industry, but the benefit to society is measurable. I encourage you to put in place some system that would help us identify foods that are gluten-free and safe for our child.
