I am a 17 year old boy and I have celiac sprue. I have had it for a year now and I must say it is a good change in diet. Only having to eat wheat free foods can be very hard to manage. One of my main concerns is the term "Modified food starch" this term could mean anything from wheat to corn starch. This is very unfair, I "could" eat things like chili and potato salad but certain ingredients are unknown to me. I would really like to clear this issue up for me and all celiac sufferers.
