The original work was done by John Blundell (Blundell, J.E., and Hill, A.J. Paradoxical effects of an intense sweetener (aspartame) on appetite. Lancet i: 1092-1093, 1986). and I have published similar findings in which the aspartame was embedded in chewing gum (Tordoff, M.G., and Alleva, A.M. Oral stimulation with aspartame increases hunger. Physiology and Behavior 47: 555-559, 1990). This work also shows a complex, gender-related sweetness-response effect, which may explain why you feel "ravenous" after consuming some aspartame-containing products but not others. There are several published reports from other groups as well, but also at least an equal number of failures to find an effect of aspartame on hunger. My reading of the literature is that there is a very, very small effect of aspartame to increase hunger-- so small that it is practically undetectable in the real world, outside the lab. Moreover, although there may be an increase in hunger, it is even less clear whether this translates into an increase in food intake. One thing that is clear, however, is there are no studies showing that consuming aspartame increases body weight-- if anything the data point in the other direction. Second, it is tempting to think this increased hunger produced by consuming asparatme is due to "anticipatory" changes in insulin levels, which is termed the "cephalic phase insulin response". However, the evidence is against it. The best paper on this topic is by my colleague, Karen Teff (Teff, K.L., Devine, J., and Engelman, K. Sweet taste: effect on cephalic phase insulin release in men. Physiol Behav 57: 1089-95, 1995). There are many cephalic phase responses, such as salivation, gastric acid production, and changes in liver metabolism, and it's my guess that one of these other responses is responsible for the appetite.
