1. Brief statement of the general nature of the views you wish to present. I wish to give a presentation on how current labeling effects individuals with gluten restrictive diets on the human level. This will not be a scientific presentation, but one which encapsulates my experiences as chairperson for the Boston and Northern Virginia Celiac Sprue chapters. I've worked with hundreds of individuals who cannot ingest any form of gluten (such as wheat starch)and would like to tell a few of their stories on how difficult it is for them (and myself) shopping at food stores.
