The food industry plays an integral part in protecting the nation’s food infrastructure. Food Defense 101 provides training in preparedness against an intentional attack against our food supply. The courses provide an understanding of and guidance for developing a Food Defense Plan(s) based on a common sense approach.
Food Defense 101 is comprised of four courses:
- Food Defense Awareness for the Food Professional;
- Food Defense Awareness for the Front-line Employee;
- Food Defense Regulations; and,
- ALERT, for owners and operators of food facilities

Food Defense Awareness for the Food Professional
This course provides an understanding of food defense and guidance for professionals in the food industry. The course modules progress through food defense planning including broad mitigation strategies, vulnerability assessments, focused mitigation strategies, and food defense plans.
Food Defense Awareness for Front-line Employees
This course provides guidance specific to front-line workers and simple procedures for these employees to follow in food defense. The FIRST initiative, which emphasizes that Employees are the FIRST Line of Food Defense, is provided in both English and Spanish.
This course presents the three FDA Regulations that have been developed to address the safety of our nation's food supply and their impact on the food industry.
This course was developed by the FDA to help stakeholders better understand food defense and how food defense applies to the food industry. ALERT has been updated to include FSMA guidance and provides specific examples on ways to protect a firm from the threat of intentional contamination. ALERT brochures, wallet cards and posters are available in English, Spanish, Chinese, French, Korean, Portuguese and Vietnamese.
On the last page of each course of Food Defense 101, you can download a Completion Certificate for your records. You can enter your name and date electronically in the certificate PDF, then print the certificate and sign. The certificate includes the Contact Hours earned for each course.
On the opening page, you can choose from a list of training courses. If you decide to leave a course at any time, you can go back and continue the course later. Within the courses, there are quizzes called Knowledge Checks, but note that any entries submitted are not retained. This training does not evaluate your participation. For navigation purposes, use the Back and Next buttons at the top and bottom of each page to proceed sequentially from page to page. You can click the bottom menu bar at any time. Clicking on the breadcrumb navigation at the top of the screen will also return you to the previous sections. All external links within the training open a page at other web sites, but you will be able to navigate between the training and external pages easily.
Food Defense 101 is hosted on FDA's website and is not a downloadable application. To use this training, you only need internet access. The recommended browsers are Microsoft Internet Explorer 8 or later versions, Firefox 4 or later versions, Google Chrome, and Safari.
