Dear Ms. Cervantes:
 

This letter is prepared in response to Warning Letter 2013-DAL-WL-015 dated November 23, 2012.
 

1. Our HACCP plan for Fresh Processed Fish; Non-Scombroid Species states that "All products are sold raw and are intended to be fully cooked before consumption by the general public" [attachment 1]. We have also added a statement to all of our invoices for fresh fish that "FDA recommends that all raw fish be fully cooked before consumption" [attachment 2].
 

We have reviewed all of our HACCP plans and regrouped products having the same food safety hazards, critical control points, and critical limits. For example, Pasteurized Crabmeat has been segregated from fresh prepackaged products.
 

2. [a] Our HACCP plan for Fresh Processed Fish; Scombroid Species has been re-evaluated and changed [attachment 3].
 

[b) A HACCP Plan for Pasteurized Crabmeat has been written [attachment 4].
 

3. Our HACCP Plan for Fresh Processed Fish; Scombroid Species has been re-evaluated and changed. Operational changes have been implemented.
 

4. Our HACCP plans for Fresh Processed Fish; Scombroid Species and Pasteurized Crabmeat
have been re-evaluated and changed [attachments 3 and 4].
